Cooking the Christmas Turkey Breast

Instructions

  1. Preheat the oven for 15 minutes.
  2. Wrap the turkey breast in tin foil like a parcel, adding salt, pepper, and a knob of butter.
  3. Cook the turkey at:
    • • Gas mark 8–9
    • • Electric 230°C
    • • Fan assisted 210°C
  4. After the main cooking time (see table below), remove the turkey from the oven.
    Reduce the heat to Gas mark 4 or Electric 170°C.
  5. Unwrap the foil parcel, pour the meat juices into a jug for gravy, then place the turkey back into the oven uncovered to brown for 15 minutes.
  6. Serve and enjoy!
